Easy Banana Recipes: Eliminate Food Waste!

Wasting food is an absolute no from me! I have a problem of buying too many bananas every week with 2-3 overly ripe bananas on Sundays. Instead of throwing them away I’ve been forcing myself to try new recipes. I like to make super quick and easy recipes to eat throughout the week so I wanted to share! Tushar absolutely loves the banana Nutella bread. I personally am not a huge fan of Nutella, shocking I know, so I make mine with chocolate chips. Banana Oatmeal Chocolate Chip Cookies

Ingredients

  • 3 Bananas overripe
  • 2 tbsp Honey
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1.5 cups Quick Cooking Oats
  • 1 tsp Ground Cinnamon
  • 1/4 tsp Salt
  • 1 cup Chocolate Chips dark chocolate
  • 1/2 cup Dried Cranberries
  • 1/2 cup Nuts cashews, walnuts, or almonds

Instructions

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, mash the bananas. Add honey, egg, and vanilla. Stir to combine.
  • Add oats, cinnamon, and salt. Stir until combined.
  • Add in all of your mix-ins. You can add in dark chocolate, dried cranberries, and nuts.
  • Put about 1.5-2 tbsps of dough per cookie. I personally like larger cookies so I tend to use more.
  • Bake in a pre-heated oven for 15minutes or until the tops are set and the bottom is lightly brown. I found mine took a couple minutes longer because I made larger cookies.
  • Serve at room temperature.

Banana Nutella Bread

Ingredients

  • 1/2 cup Butter salted or unsalted
  • 2 cups All-purpose flour sub gluten free if needed
  • 1 tsp Baking soda
  • 3/4 tsp Salt
  • 3 Bananas very ripe, mashed
  • 3/4 cup Granulated sugar
  • 1/4 cup Plain Greek yogurt
  • 2 Eggs
  • 1 tsp Vanilla extract
  • 1/3 cup Nutella

Instructions

  • Heat oven to 350 degrees F. Butter and flour your loaf pan. I also have used non-stick spray and it came out just fine.
  • Stir the flour, baking soda, and salt together in a bowl.
  • Brown the butter. Melt butter in a light colored saucepan over medium heat. Cook the butter and occasionally scrape the bottom and sides of the pan. Cook until golden brown and smells nutty. It only takes a couple of minutes so stand right by the pan. It can taste burnt in the matter of seconds.
  • When the butter has cooled slightly, add in your mashed bananas, sugar, yogurt, eggs, and vanilla extract. Then add the flour mixture and stir to combine. Do not overmix.
  • Pour half the batter into the loaf pan and spread evenly. Spoon half the Nutella into dollops over the top and use a toothpick to swirl into the batter. Spoon the rest of the batter on top and place the rest of the Nutella on top. Swirl the Nutella on the top, then bake the bread for 55-60 minutes or until the toothpick comes out clean. Sometimes I bake for an extra 10-15 minutes so don't be surprised.

Notes

Do not use additional Nutella in the batter as it will weigh it down and not cook properly. You can always add Nutella on top once it is done baking.
If you don’t like Nutella, I have also mixed in chocolate chips.
