Growing up, my mom made the BEST food that all of our friends loved to come over for dinner. It always amazed me that my mom could create literal magic out of a couple of ingredients. She recently cooked up these 3 easy taco recipes below. Two of the chicken recipes require a crockpot. If you love meals that require almost zero prep, these are for you! I would bring these to a tailgate, and I know they would be a crowd favorite by using this inverter to plug into your car.
In the recipes below feel free to play around with your toppings and taco shells to create your easy taco recipes. You will notice I put up to two different styles of tortillas with the tacos, but please use your personal preference.
Easy Fish Taco Recipe
The tilapia tacos with a sriracha tarter sauce are my mom’s original recipe. Most places overly bread their fish tacos so in this recipe it is a thin coating to not overwhelm the delicate fish. Tilapia is a great fish to use as it absorbs flavors very well without tasting too “fishy.”
Tilapia Tacos with Sriracha Tarter Sauce
Ingredients
Fish
- 1 pound Tilapia filets
- 1 package Taco seasoning
- 1 tbsp Garlic powder
- 1 tbsp Paprika
- ¾ cup cornstarch
- Salt and Pepper to taste
Toppings
- 1 tomato diced
- 1 avocado sliced
- ½ cup cheddar shredded
- 1 cup lettuce shredded
Shells
- Street Taco Shells
- White Corn Hard Shells
Sriracha Tarter Sauce
- 2 tbsp Mayonnaise
- 2 tbsp Heavy cream
- 1 tbsp Sweet relish
- 1 tsp Sriracha
- ½ tsp Cumin
- ½ tsp Garlic powder
- ½ tsp Paprika
- Salt and Pepper to Taste
Instructions
Fish Preparation
- Mix all seasonings and cornstarch in a ziploc bag. Cut tilapia filets into one inch wide strips and put in ziploc bag to coat.
- Drizzle olive oil in a frying pan and cook the fillets at medium heat to brown. Cook 5 minutes on each side. The fish will be white and flaky.
- Assemble tacos with the fish and toppings of your choice. Enjoy!
Sriracha Tarter Sauce
- Add mayo, heavy cream, sweet relish, and spices into a bowl and place in the refrigerator to chill.
Crockpot Easy Taco Recipes
If you are an on-the-go person or hate making dinner, crockpots are key. During residency when I didn’t have much time on my hands, I used to search on Pinterest for crockpot recipes. The recipes below can also be found on Pinterest with a variety of variations. These recipes below are not original to my mom, but she said they are quite tasty.
3 Ingredient Crockpot Tacos

- 1 package Chicken Thighs 5-6
- 1 jar Salsa
- 1 package Taco seasoning
Toppings
- 1 cup Cheddar cheese shredded
- 1 cup Lettuce shredded
- Corn or Soft Flour Tortillas
Instructions
- Put all three ingredients in a crockpot and cook for 6 hours. Cook on high setting.
- Debone the chicken thigh and shred the chicken. The chicken is super tender so it falls apart so it should be easy to shred.
- Assemble with your favorite toppings on soft flour tortillas or corn hard tortillas.
Buffalo Chicken Tacos

Buffalo Chicken
- 1 package Chicken thighs 5-6
- 1 package Hidden Valley Seasoning Packet
- 1 bottle Red Hot Buffalo Sauce
Toppings
- 1 Avocado
- Coleslaw
- White Corn Tortilla Shell
Instructions
Buffalo Chicken
- Put all three ingredients in a crockpot and cook for 6 hours. Cook on high setting.
- Debone the chicken thighs and shred the chicken.
- Put the buffalo chicken in a white corn tortilla and top with coleslaw and avocado.
