Orchard Fresh: Apple Coffee Cake

I have tested this apple coffee cake recipe twice with all the apples I picked a few weeks ago at the apple orchard. It has been an absolute crowd favorite. Don’t let the name fool you, the apple coffee cake is very moist and delicious to enjoy all day. The sweetest part of the recipe is the icing on top so if you don’t want more added sugar you can always omit this part.

To make the dessert I make the apple cake and the crumble first. While the baking I prepared the glaze on top. Make sure once the cake is done you give enough time for it to set before serving. I personally thought it tasted best the next day.

Personally I do find some activities are over-hyped. I wouldn’t go to Serra at Eataly except for drinks. I thought the menu was subpar and extremely expensive. We also went to the Halloween Parade last year in New York and it was so crowded! You would have to get there extremely early to see anything.

Apple Orchard Coffee Cake

This recipe is fall in cake form! The cake itself is very moist and has the perfect blend of fall spices.

Ingredients

Apple Cake

  • 2 cups All Purpose Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 cup Butter softened
  • 3/4 cup Sugar
  • 2 Eggs
  • cup Milk
  • tsp Vanilla Extract
  • cup Peeled, Chopped Apples Granny Smith, Fugi, Pink Lady

Crumble

  • ½ cup All-Purpose Flour
  • ½ cup Brown Sugar packed
  • ¼ cup Sugar
  • 2 tsp Cinnamon
  • ¾ tsp Nutmeg
  • ¼ cup Butter cold, cubed

Glaze

  • ½ cup Powdered sugar
  • ½-1 tbsp Milk

Instructions

  • Preheat oven to 350°F. Lightly spray a 9×9 inch baking dish or cake dish with non-stick cooking spray.

Apple Cake

  • In a small bowl, whisk together flour, baking powder, baking soda, and salt.
  • Core and peel your apples. Make sure to chop them into smaller cubes so they are able to cook in the batter.
  • In another bowl of a stand mixer or with an electric hand mixer, combine the butter and sugar. Add in the eggs and beat together until creamy. Add in your milk and vanilla extract until creamy. Add in your dry ingredients to wet ingredients and mix until just combined. Stir in your apples at the very end.

Crumble

  • In a small bowl, whisk together your flour, sugars, cinnamon, and nutmeg. Cut in butter until mixture resembles coarse crumbs. I used a fork for mine since I didn't have a pastry cutter but it did take a while to combine.

Glaze

  • Mix together your milk and confectioners sugar to a glaze consistency and set aside to the very end.

Assembly of Cake and Crumble

  • Pour half batter into prepared baking dish. Sprinkle half the crumble mixture Carefully spread the remaining batter over the top. Sprinkle the remaining with the crumble mixture.
  • Bake for 40-45 minutes or until your toothpick inserted comes out clean.
  • Once your cake is finished baking, drizzle the glaze on top. Let the cake cool before serving.
